Butternut Coconut Curry Soup

1 butternut squash, baked, peeled and seeds removed (see baking instructions below)
6 C beef or chicken stock (preferably homemade or organic store-bought stock)
1/2 C coconut milk
1/2 C coconut oil
1 T curry powder
2 t sea salt

Combine all ingredients in large pan and blend with a hand blender.  (If you don't have a hand blender, blend the butternut squash with a cup or two of the beef stock in a blender before adding it to the pan.)  On a stove top, heat the ingredients on medium heat until desired eating temperature is reached.


Butternut Squash Baking Instructions

As Butternut Squash can be rather challenging and time consuming to peel and cut when raw, it's easiest to simply bake the squash whole and then peel and remove the seeds after it has cooled enough to be handled.  To bake the squash, first wash the squash.  Next, put it in a baking dish or a deep-sided baking pan.  Poke the squash with a sharp knife three or four times in various places on the squash, make a small cut mark.  This will help let steam escape as the squash bakes.  Then, add 2-4 cups of water to the bottom of the pan (the amount of water depends on the size of your pan).  You want approximately 1 inch of water.  This helps to keep your squash moist.  Bake the squash at 400 degrees for 1 - 2 hours, depending on the size of your squash (add more water if needed .  When the squash pokes easily with a fork, it is done.

Herb Salad Dressing- GAPS Friendly!

_Herb Salad Dressing

Ingredients:
1 C olive oil
1 C raw apple cidar vinegar
2 medium onions (red, yellow, or white)
5 large garlic cloves
1 T paprika
1 T sea salt
2 t thyme
2 t sage
1 t curry powder
Handful of fresh parsley (optional)

Instructions:
Blend all ingredients in a blender until smooth.  Store dressing in a glass jar in the refrigerator.   If dressing becomes solid, let it sit at room temperature for a few minutes before serving.

Almond Butter Caramels - GAPS Friendly!

_ Almond Butter Caramels
(recipe adapted from recipe by Julia at www.pecanbread.com)


4 T Organic Butter
¾ Cup Honey
4 t Vanilla
¼ t Sea Salt
1 Cup Almond Butter (or nut butter of your choice)

Combine all of the ingredients in a saucepan and cook on medium heat, stirring constantly until the butter is melted, ingredients are well blended, and the honey no longer has a grainy consistency. 

Pour into a lightly buttered 8” square glass baking dish.  Put the dish in the freezer for 15-20 minutes or until the caramel is firm, but still soft enough to cut with a buttered knife or spatula.  Cut caramel into bite-size pieces and serve.  Store caramel in the fridge.

Carrot Onion Herb Bread- GAPS Friendly!

_ Carrot Onion Herb Bread

Ingredients:
2 C almond flour
2 C grated carrots
1 medium onion (red, yellow, or white) grated
3 eggs
3 garlic cloves, minced
¼ C olive oil or butter (softened)
1 t baking powder
½ t sea salt
¼ C fresh basil or (1 t dried)
½ t sage
½ t thyme
Dash of cayanne pepper

Instructions:
In a mixing bowl, combine all ingredients and mix well.  Place in greased 9x12 baking dish (olive oil, butter, or coconut oil are good to grease the dish).  Bake at 350 degrees for 40-45 minutes.
